Blanc de Blanc Extra Brut Daviaux champagne is made with only Chardonnay grapes from Chouilly (80%) and Cramant (20%), both classified as Grand Cru. The grapes used are those of the 2018 vintage, processed in steel, with vins de reserve from 2016 and 2017. Malolactic fermentation carried out, stopping on the lees for almost 5 years. Dosage only 4 gr / l. with brown sugar and Vin de Reserve.
Three hectares of vineyards on the southern front of the Grand Cru commune of Chouilly, bordering Cramant; this is the small piece of land that Sébastien Daviuax, fifth generation of "Vignerons", received as a dowry from his parents. A handful of bottles are active, only 4,000 a year, with a single great protagonist: Chardonnay. It could not be otherwise given that in the village of Chouilly allo Chardonnay over 500 hectares of vineyards are "reserved" (99% of the municipal area planted with vines). A Village that has always been "frequented" by the great Maisons, ideally located at the end of the legendary Avenue de Champagne of Epernnay; in fact the first vineyards that can be reached from the world capital of bubbles. Sèbastien, wine studies in Avize, is young but already has clear ideas.
