Raw fish dishes
Oysters, caviar, shellfish, salmon tartare, etc... And many others we could name. Raw fish is loved by many, and the pairing with wine, especially white, is impeccable. But which wine? The answer cannot be unambiguous, as each type of fish will present different needs.
Oysters, meaty, savory but at the same time with sweet, delicately aromatic perceptions, will be perfect paired with a champagne or classic method preferably characterized by a low sugar content. Another classic pairing with oysters are French white wines.
These same recommendations can adapt well to other raw fish, which can also pair very well with aromatic or semi-aromatic wines with a distinct, refreshing acidity.
