Malvasia Rosa is a wine that Camillo Donati conceived and dedicated to his mother Rosa. Initially, his idea was to create a dry rosé but not starting from red grapes, as is usually the case. He therefore chose to start from the Malvasia that his mom liked so much. To then achieve the rosé color in a natural and non-invasive way, he added 5% of a red grape.

Starting with the 2022 vintage, however, this wine is made from a very rare grape, the result of an entirely natural genetic mutation, a variety of Malvasia that is already pink in color from the bunch.

Three Senses
The Camillo Donati Pink Malvasia is a unique bottle, in quality and singularity since it is one of the few to use Rose Malvasia. An extraordinary drink: veiled red color with auburn tones. On the nose violet and peach incredibly together. The mouthfeel is thick, invades the whole palate and the subtle bubble cleans everything perfectly. Sensations of a great aging wineAbbinings:Perfect in aperitifs lends itself well with typical Emilian cured meats such as salami, prosciutto, spalla cotta.Also excellent on grilled shellfish or a spaghetti with clams and tomatoes cooked for a long time.

Camillo Donati is one who respects nature as first principle. The history of its vineyards begins with his grandfather and the with the need to feed the family in the early twentieth century. Camillo Donati grows in the vineyards and begins immediately to take care of them, knowing the difficulties, but loving the environment. Its vineyards are found in Arola, Low Parma, the places of great salami. Camillo begins his vigneron path along with the family friend Ovidio in order to keep intact the practices of the cellar and the tradition of the wines of Emilia. Today it is a biological and biodynamic viticulture, all the processes are made by hand, as well as the sparkling wine that is made by natural fermentation in bottles. A tradition that can only continue with true respect for nature and its fruits.
