Visciole wine is made from a long fermentation of Montepulciano and Sangiovese grapes with a subsequent addition of visciole. The visciola is a small, spherical, dark-colored cherry with a tart flavor.
These fruits are placed in glass containers with sugar, then they are exposed to the sun in the warm months of late June-July; a syrup is produced from their fermentation. Visciole, which have always been present in tradition, were used not only to make wine but also as a dissenting drink.
The wine is deep ruby red in color, vinous and full. Sweet-sweet with a slightly bitter aftertaste, fragrant, it goes well with any dessert. It goes well with characteristic cookies called cantucci.
