The grapes come hand picked and pressed to whole bunch, carbonic vinification in cement for 2 weeks, vertical pressing 10 hours, followed by aging in barrique
Burgundian for 6 months. Small percentage of sulfur (2gr / hl) at bottling.
Ugo Lestelle
Ugo Lestelle is a young producer in Languedoc, with an already established reputation in the world of international wine. After viewing various vineyards in different areas of the south of France he decided to settle permanently in Saint-Chinian, restoring an old sheepfold at 550 meters above sea level. Here it was the clayey-calcareous soils with a very large percentage of silicon that cap it.
In 2015 he began his adventure with only two hectares of property. Today there are 7 hectares, but the style and philosophy have remained unchanged: natural wine at all costs, with a predilection for carbon maceration.
Its vineyards are organically cared for, while nothing is used in the cellar other than a small percentage of sulfur in bottling.
He works with native vines of the area such as grenache, carignan, aramon, syrah and terret, vinifying them with full-bunch carbon maceration and aging in small barrels. The choice of wood changes with each of its wine. A very young man to keep an eye on.
