Grolleau is the most ordinary dark grape of the Loire, giving very high yields of a rather lean and acidic wine. Julien Delrieu's vineyard in Les Saint Martin rests on deep gravelly soil with a good percentage of clay. The grapes are vinified separately in fiberglass vats, the whole bunches after a few hours are pressed and fermented thanks to the indigenous yeasts.
