Verdicchio Riserva Ambrosia Vignamato 2021
Ambrosia is a Verdicchio dei Castelli di Jesi Riserva, the result of a rigorous selection of grapes from the estate's oldest vineyard, planted by Amato in 1975. The vineyard is located at an altitude of 230 meters above sea level in Contrada Battinebbia. The vines have a northeast exposure and the soil is clayey with the presence of limestone residues.
After manual harvesting, the grapes undergo a gentle pressing and the following fermentation lasts about four to five weeks and is operated by indigenous yeasts only. Vitrified cement containers are chosen for aging for 24 months. The subsequent bottle aging, on the other hand, has a duration of 12 months.
For pairing Ambrosia, we recommend elaborate fish dishes, including smoked ones. Perfect with shellfish, mollusks, egg pasta and white meats. Try it with rabbit in porchetta, a traditional Marche dish.

Since 1952, the Ceci Family has been cultivating and caring for the vineyards to produce wines that reflect the tradition of the Verdicchio territory. Alessandra, Andrea and Francesco, accompanied by their parents Maurizio and Serenella lead the family business today, preserving the old family vineyards and opening up to new wine-growing areas always within the oldest area of Verdicchio, in the idea of emphasizing the importance of zoning and the peculiarities of the different vineyards.
Precisely to achieve this result, special attention is paid to the diversification of individual vineyards, obtaining wines characterized by unique nuances. No chemicals used, only manual harvesting, aging in vitrified cement and steel containers.
The 26 hectares under vine are divided into 8 different plots that differ in unique peculiarities. Most of the vineyards are located in St. Paul and have an average age of 25-35 years. The composition of the soils differs from area to area.
The varieties grown are: Verdicchio, Incrocio Bruni, Montepulciano, Sangiovese and Lacrima di Morro d'Alba.
