Pommard Les Vignots Maison Gautheron D'Anost
The Pinot Noir from the village of Pommard climat “Les Vignots” is worked in whole bunches. The vineyard is located in the eastern part of the municipality. Relatively rapid maceration and fermentation to avoid over-extraction, all in small 15 HL stainless steel vats, 2 very delicate punchings. Only five barriques were produced this year.
Maison Gautheron D'Anost
Bastien Gautheron was born and lives in Dijon. It is here that he lived his youth, and it was also in this city that he obtained his diploma in Oenology. The bottles he approached first are those coming from the vineyards surrounding the city. This strong bond influenced him in the choice to build his Maison right in the urban heart of the city, with the aim of reviving the taste of Dijon wine that has been missing since the death in 2014 of the last neighborhood winemaker, Pierre Gerard. He recovered an old warehouse where he could mature the bottles in the Arsenale district. He managed to acquire some vineyards in Savigny Les Beaune, but thanks also to his experience as a distributor and buyer in the Middle East he manages to purchase grapes rigorously. Flexibility and reactivity thanks to the use of small 15 HL stainless steel tanks, cooled only during pressing. The grapes are then manipulated little or not at all, with temperatures naturally rising during fermentation. The extraction is limited to two pumping overs before the start of alcoholic fermentation to avoid an excess of oxygen (and therefore a risk of too rapid fermentation). The rest happens only by pumping over, one per day. All the wines are aged in barrels, the oldest dating back to 2014, a part of each white cuvée is aged in 350 L barrels (from 2017) to maintain maximum precision without distorting the wines with wood. The reds are patinaed and magnified by some new barrels (less than 30% in all cases), all with light toasting.
