Benoit Lahaye
One of the small but great manufacturers. One of those who knows how to create very pleasant wines in a dimension of craftsmanship. One of those who follows the most rigorous cultivation, "bio", to the point of leaving the tractor for the horse, but he does it in the pure way, so without forcing. The company is located in Bouzy, 3 hectares, with vineyards also in Ambonnay Tauxières, Vertus, the last one is cultivated to chardonnay. Hiss wines are inextricably linked to pinot noir, fermented mostly in François Frères barrique. His champagnes are produced in about 40,000 bottles a year, they are vinous and complex, but also tense and minerals, therefore, never heavy, and always very pleasant.
The most representative wine of the Domaine: all Bouzy Pinot Noir, from vineyards with no less than 35 years, whose grapes were then fermented mostly in barrique, where the wine has long been on its lees. Malolactic fermentation is carried out only partially. Dosage 5 g / l
