Fois is the first wine from Falanghina grapes produced on the farm. Its name comes from the fusion of the Neapolitan culture with that of the other side of the Alps, the latter inherited from the ancestors. The first time in French is the première fois whose pronunciation, [fuà], sounds like Fulvio's nickname as a child.

The production area is that of Frasso Telesino. The Guyot-trained vines grow on clayey soil. The vinification takes place entirely in steel, with indigenous yeasts. The refinement period also takes place in steel before being bottled.

Three Senses
Imma and Fulvio managed to give Falanghina a new face. Straw yellow color, intense aroma, fruity and floral at the same time, on the palate it presents itself with a good freshness and flavor.

The Cautiero farm is located in the hinterland of Campania, in Frasso Telesino, on the north-west side of Mount Taburno, within the Doc Sannio. Viticulture here makes room among olive trees, pastures, cherry trees and woods. Here land, air, water and plants live in perfect balance. In 2002 Fulvio and Imma began the cultivation of the land with the biological method (copper, sulfur, microbiological struggle and green manure with minimum tillage). In 2010, the first wines they had in mind finally saw the light in the cellar. Improving their grandfather's technique, they begin to produce a wine capable of expressing the vintage and the territory of origin. With the favorable microclimate, the clayey soils and the low yields, important and structured wines with a marked typicality are obtained. Fermentation is spontaneous for all wines and the use of sulfur is limited to what is strictly necessary. In the 4 hectares of company vineyards the grapes grown are the typical Campania: Fiano, Falanghina, Greco, Piedirosso and Aglianico. As Imma and Fulvio say: "everything comes about because we love to excite, making us perceive the essence of the nature that surrounds us, of our microcosm, our passion for the land, all thanks to our wines."
