Franciacorta Blanc de Blancs Cavalleri

It is made of 100% Chardonnay, coming 80% from the 2014 harvest, 20% from 2013, 2012 and 2011 vintages; the fermentation takes place in steel (86%), large oak barrels (7%) and old barriques (7%). Aging on the lees for at least 24 months which represent a mark for Cavalleri, after 4 weeks of manual remuage.
They make 10 dégorgement, from April 2017 to May 2018, with the addition of liqueur d'expédition and a dosage of 0 g / l of sugar.
The healthy biodynamic breeze that is blowing on the Cavalleri vineyards, for the first time in 2014 Vintage, Blanc de Blancs introduced 10% of fermentations with indigenous yeasts. Small steps, consistent with the path towards Franciacorta for excellence, in which the fineness and elegance of the Erbusco's hills Chardonnay surprisingly grow over time.
The Cavalleri family lives in harmony with the land since 1450. Cavalleri has always been a promoter of the benefits for a long aging on the lees. The bottles are turned by hand one by one in the cellar leaving an indelible imprint on all wines.
