San Giovanni is a red wine made of 50% of Morescone and Carcaghjolu grapes. The vineyard grows on clay-calcareous soil with exposure to the South-West area. The Patrimonio production region is located near Bastia, in the north of Corsica, and it is recognized as one of the most interesting wine region.
This wine is processed with indigenous yeasts, keeping sulfur dioxide levels to the minimum necessary, it is only added only during the bottling phase. Then it is left to macerate for 5 days, without pouring or pumping over. Aging takes place in cement tanks.
Three Senses
It enters the glass with a bright and lively red, like a cherry and raspberry juice. The mouth is slightly spicy and with large and delicate hints of pepper. Dense but elegant tannicity that creates the perfect evening dress to experience this wine in complete harmony.
