Giacomo Conterno has been producing wine since 1920 when the wines were produced from grapes purchased in the best vineyards of Serralunga d'Alba and Monforte d'Alba. Over the years the vines have been bought, up to the current 17 hectares cultivated following the principles of the integrated struggle. The cultivated varieties are Nebbiolo and Barbera, both bred in the Cascina Francia and Ceretta vineyards. In the cellar there is a cleanliness and rigor of remarkable quality, every barrel, every steel tank, every tool are in perfect order, ready to interact to create the magnificent wines known throughout the world, like this barolo reserve harvested in mid-October , whose first fermentation takes place in truncated conical oak vats of 61 hectoliters, where the grapes are subjected to long maceration on the skins, even with a submerged cap and with temperatures that are allowed to rise to 32 ° C. At the end of the first fermentation, the Monfortino is moved into large wooden barrels, almost exclusively of Austrian origin, of variable size, where malolactic fermentation takes place and matures for about 82 months.
