Passatella rosato is Giulio Steiger's blend that gives priority to Montepulciano, present for 85%, with 10% of Aglianico and 5% of Tintilia. The name is a tribute to a popular tavern card game already known in Roman times, which began with a demijohn of wine at the table. The 1 L format is specially designed for conviviality. The fermentation is spontaneous in wooden vats, while the refinement is in concrete.

Steiger-Kalena was born in 2014, when Giulio Steiger and his wife Margarita decide to leave Paris and return to the lands where Giulio was born, to work in nature and create a new family. Molise is a land still intact and they choose a unique place, a short distance from Lake Guardialfiera, then partly cultivated with wheat and partly still wild. In 2015 the planting of the vineyards and the construction of the cellar began, dug into the hill for the minimum impact on the environment.

The vineyards cover 12 hectares of the 30 total and are divided into 24 small plots between Montepulciano, Aglianico and Tintilia. Cultivated in pergola to protect grapes and soil from the summer sun, the plants see the use of only copper and sulfur. From time to time Giulio practices green manure and the only fertilizer is given by a compost produced autonomously with winemaking waste, chips from vine and olive tree shoots and the manure of the donkeys and sheep who live on the farm, under an old tower. on guard.

The cellar was built adjacent to the vineyards to ensure maximum freshness of the fruit. Fermentations are spontaneous, in wooden vats and in concrete tanks without temperature control. The beautiful champenois press that embellishes the cellar is used for pressing the marc separated from the wine. Each plot is vinified separately and is part of the blends according to the label and style. For the refinements Giulio relies on cement tanks, 50hl vats and 25 and 50 hl oak barrels.
