Jeremy Recchione is another young fan of Aligoté, who together with the other winemakers are giving energy and new vitality to this native Burgundian. His Aligoté has a further peculiarity, it is vinified in contact with the skins and then aged in 400L Clayver. This Aligoté, destemmed and macerated for five days, then vinified and aged for eight months in ceramic vats, suddenly has only a very slight sulphitation after the malolactic fermentation. At once dense and fresh, fluid, it is a superb Aligoté, deep with a beautiful complexity.
