Direzione Papaina is a blend of the best wines from different vintages. The winemaking process is traditional. After careful manual selection, the grapes are picked at the right degree of ripeness. The drained must ferments in cement tanks, after which it is racked into steel tanks located in the underground cellar in which it ages on its lees for at least 12 months.
The wine is bottled without undergoing any clarification, stabilization or filtration.

Gabriele Benedetti is a young man of great sensitivity, with a great passion for viticulture. After a few years he left Enology studies to devote himself, soul and body to the historic family business. After his grandfather Nazzareno, founder of the cellar in the second post-war period, and after Father Eugenio, who started the path to the bottle at the beginning of the eighties, Gabriele began to point to quality through a healthy and respectful nature viticulture.
The company's cru is the Fornacione, 3 hectares at 400 meters of altitude, in a ventilated south-west area, that is owned since 1962. The 5 hectares of the Cavalieri farm (which gives Name to the cellar) are exposed to the north, covered with new vines obtained from the mass selection of the older vines. They close the panorama of the 2.5 hectares in the Valche district, with vineyards of over forty years, rented but managed directly.
Gabriele's sustainability in the vineyard is an indispensable value even in the cellar. No forcing in vinification, just decantig, stopping on the lees and no clarification. Also the use of sulfur is minimized and for this reason, sometimes wines can accuse some oxidation.
