The rare Picolit is produced by the Azienda Agricola Ronco dei Tassi in a vineyard located at 150 m asl composed of sandstone marls of Eocene origin. The average age of the vines is 30 years. The yields per hectare due to acinellation are extremely low, around 10%. After harvesting in mid-October, the Picolit grapes are left to dry on racks for 40/50 days. The subsequent fermentation takes place in Allier's oak barrels. The wine stops on fermentation yeasts for 15 months in small oak barrels and 3 months in bottle before marketing.
