Wild game

If we think of wine-wild game pairing, we immediately think of a red wine. And in most cases this is the case although, with some well-structured white wines, one could have very interesting results. In general, with fur game (hare, wild boar, roe deer) structured, persistent, tannic red wines (especially with fattier meats) even aged ones such as a Chianti Classico, Barolo or Brunello di Montalcino are perfect.
With feathered game, however, a less complex red wine may also be suitable.
