The particularity of this curious and delicate vine is the partial fertilization of the flower, which determines the growth of very few and very concentrated berries for each bunch. This is small and winged, with a few 10-15 very small and pruinose berries.
The overripe grapes, harvested manually in crates, are de-stemmed and placed in open vats, where the fermentation activity begins by indigenous yeasts and in the absence of sulfur, with frequent punching down. The must remains in contact with the skins for 6 days without temperature control. Subsequently the must is separated from the skins and placed in 500-600 liter casks to continue fermentation. The elevation on the noble lees lasts 12 months during which the wine almost completely completes the malolactic fermentation.
After bottling, which takes place without sterile filtration, a 6-month bottle aging will follow.
