The grapes at the origin of this cuvée come from a plant of about 0.85 Ha from the predominantly sandstone-clay substrate located immediately below the village of Mittelbergheim. The yields oscillate around 35 hl / ha. Manual collection of 30 kg crates. The whole and semi-carbon maceration in the boot has an average duration of two weeks and takes place in steel tanks. A 6-month elevage in Burgundian pièces follows from the fourth to the sixth passage. Indigenous yeasts. No glue and filtration. Sulfitation absent during the vinification phase and from zero to max 15 mg / l in bottling.

Converted to the organic regime starting from 2009/2012 and now firmly anchored to the dictates of biodynamic Lucas Rieffel over the years has taken on many risks, preferring to renew his vineyards with mass selections of the best and oldest shoots rather than commissioning them to a nurseryman as more usual .... And this in the firm belief that the only way is to "obtain pure and highly concentrated wines capable of reflecting the multiple facets of Barr 's terroir". Plant density between 6500 and 8500 vines per hectare. A mix of clays, marl, granite and limestone combined with a saline trace borrowed from the ancient seas are the geological substratum of that minimalist approach in the vineyard and in the cellar aimed at a result in the expressive and identity chalice never demonstrating and striking drinkability . In Lucas wines, all obtained from spontaneous fermentations and with no sulphitation during the vinification phase, there is no trace of "that traditional and old Alsace" which too often has bent the peculiarities of the terroir to instances of marked aromaticity, fruity intensity or even sugary residues with a vaguely infantile conception.
