In fact, this Petillant Naturel expresses the nature of this family that has always been immersed in wine.

The estate, with its very modern cubic shape, is nestled in one of the most famous Franconian vineyards, the Würzburger Stein. Growing up in the family business, in 1990 Ludwig Knoll found it natural to take over from his father in the management of the estate, which he now leads together with his wife Sandra. Since the couple chose to convert vineyards and cellar to biodynamics, profound changes have taken place on this estate, all very positive.

Surely the soil and the microclimate have benefited enormously, but above all the wines show, year after year, an ever higher level of quality and much more pleasantness. Cabernet Blanc and Sauvignon Blanc are the unusual grape varieties that make up this sparkling wine. The vineyards are located in the mythical Stettener Stein a lean and limestone soil.

The plants are between 40 and 70 years old, located just above the bank of the Main. Thanks to this complex soil, the wines are characterized by a mineral style and always show great depth. Pure & Naked is processed without the addition of yeasts, sugars, must, or other help elements. Only the natural fermentation that is not completed.
