The Cervaro della Sala grapes come from 15/20 year old vineyards located in the land surrounding the Castello della Sala, at an altitude between 200 and 400 meters above sea level, of Pliocene origin, rich in marine fossils with some infiltrations of clay. The bunches, collected during the night, were transferred to a refrigerated conveyor, to ensure the low temperature at the time of crushing and de-stemming operations. The varieties were vinified separately because they ripen at different times and also require a different approach to winemaking; Chardonnay musts remained in contact with their skins for 8 to 12 hours at a temperature of around 10 ° C. After this phase, the musts were transferred to 225 l new barriques. French oak (Alliers & Tronçais) where the alcoholic fermentation took place for about 14 days. The wine remained on its lees in barriques for about 6 months, during which it completed malolactic fermentation. It was then assembled and bottled. A period of further 10 months in bottle aging followed in the historic cellars of the Castello della Sala, before being introduced onto the market. The Cervaro derives its name from that of the nobles who owned the Castello della Sala during the 14th century: the Mondaldeschi Della Cervara. The Antinori family bought the property; in 1940. The first vintage of Cervaro della Sala produced was 1985, introduced on the market in 1987. This wine has won numerous awards and has obtained several important awards for the constant quality demonstrated.
