The grapes come from the vineyards of the Castello della Sala, located between 200 and 350 meters s.l.m. On clay soils, rich in marine fossils. The grapes were collected manually by returning to the same vineyard several times in connection with the attack of Botrytis Cinerea. After transporting to the cellar the clusters were further selected on a sorting tape. this process is followed by a slight crushing without being separated from the rasp. After pressing, the must fermented for 18 days at a temperature of about 17 ° C. The obtained wine, still sweet, was introduced into French oak barrels (Alliers and Tronçais) where it remained for about 6 months before being assembled and bottled. Alcohol: 12.5% The Muffato della Sala is produced with botrytised grapes harvested in early November to give the possibility to the morning mist to favor the development of Botrytis Cinerea or "noble mold" on the grapes. This mold reduces the water content of the grapes and concentrates sugars and aromas, giving the Sala Muffato a harmonious and unmistakable taste. The first vintage was 1987 and had a composition that included Sauvignon Blanc (50%), Grechetto (30%) and Drupeggio (20%). Subsequently, the composition varied to the present. Muffato della Sala is produced in very limited quantities.
