Pinot Nero Giacomo Baraldo is a fun and drinkable wine that is produced from vineyards in New Zealand, in the Waipara Valley where Giacomo spent a period of intense work and discovery.

The fermentation takes place in the vineyard with indigenous yeasts for 20 days and for 1/3 in whole bunches. The ageing is for about 10 months in French oak barriques of fourth passage, 2 months in steel and 6 months in bottle.

Giacomo enrolled in the course of Viticulture and Oenology at the Faculty of Agriculture in Perugia and in 2009 with his father he planted the first rooted vines of Sangiovese, Merlot and Cabernet Sauvignon in the Bossolo vineyard, but not before having travelled the world: Patagonia, New Zealand but above all to Burgundy, where he found the wine of his dreams from Domaine de Montille and made the most of his experience.

In 2016 Giacomo decided to return to his homeland and dedicate himself to his land in San Casciano dei Bagni in Tuscany, respecting the peculiarities of the vines and the territory thanks to the techniques learned abroad.

Among the projects there are: Sangiovese regrafted with the Bossolo vineyard, Chardonnay and one in Grechetto, 600m above sea level on the western slopes of Monte Cetona.

The fertility of the soils is guaranteed by the manual processing, the treatments with copper and sulphur are established according to the vintage and climatic conditions. The harvest is manual and the yields are about 1 kg of grapes per plant.

Giacomo has also maintained a production of Pinot Noir in New Zealand.
