Agnes Paquet

After completing his oenology studies, in 2000 Agnès Paquet resumed cultivating the vineyards owned by the family, a single parcel of about 5 hectares in the Municipality of Auxey-Duresses, lieu dit Les Hoz, until then leased. Over time, other parcels were acquired, up to the current 13 hectares on the denominations Bourgogne Aligoté, Bourgogne Chardonnay, Bourgogne Pinot Noir, Hautes Cotes de Beaune blanc and rouge, Auxey-Duresses, Pommard, Chassagne-Montrachet, St. Aubin 1er cru Les Perrières. From the 2020 vintage, a plot of about one hectare will enter production in the Municipality of Meursault, lieu dit Les Plumes, planted about 45 years ago with Aligoté. The first vintage produced was 2001. Since 2004 it has been in an organic, although not certified, regime. Harvest by hand, selection of the bunches in the vineyard and in the cellar. The vinification of the whites takes place in fûts, with aging of 11/18 months depending on the cuvées and the vintage. The vinification of red wines takes place in cement containers for 15/20 days, with aging in fûts, new for 15/30%, which lasts 10/12 months depending on the cuvées and the vintage. The use of SO2 and chaptalisation is reduced to the bare minimum and only when it is deemed strictly necessary. According to the Domaine style, red wines are gourmand, on the fruit, and white wines favor freshness and minerality.
