Following an ancient wine making practice, in March, after the Amarone decanting, a part of the Valpolicella produced the previous autumn is placed on the pomace left in cask. The grapes used come all from the morainic hills in Valpolicella, with red clay and limestone. The vineyards are 20 years old and consist of 30% Corvina, 30% Corvinone, 30% Rondinella, 10% of other strictly local varieties. The harvest at the turn of September and October brings ripe and healthy grapes to the cellar. After an alcoholic fermentation with maceration of 15 days at 28 ° C and spontaneous malolactic fermentation, in March the wine is spontaneously clarified and begins a slow fermentation on Amarone marc and recioto for another 8/10 days at 18 ° C. It is then refined in Slavonian oak barrels for 1/2 years and a further 6 months in the bottle.
