A jewel from the Dettori winery, a wine from Cannonau, Monica and Pascale grapes grown at 300m on a hill rich in calcareous soil. The vineyard of 12 hectares is led to sapling and has an average age of 100 years. At maturity, the harvest is manual and the grapes are de-stemmed and then passed to the cement for a maceration and spontaneous fermentation that lasts from 3 to 10 days. It is refined for two or three years in small tanks, always in cement and then in bottles. The wine does not undergo clarification or filtration.

In the 2008 vintage only 2,000 bottles were produced because of the downy mildew.

While seeing all the grapes disappear in the plant the company has remained faithful to the tradition: do not use poisons.

Better to lose the grapes of a season that pollute the Earth.
