Another Gewurztraminer is possible. This is how Patrick Uccelli says in the story of this wine. The grapes are found in the Dornach vineyard in the Province of Bolzano, within the I.G.T. created in 1995 to group a multitude of indigenous varieties recommended in a province restricted to appellation with individual vines. The ground is a conglomerate of porphyry (rhyolite). The yields are around 60 ql / ha. The vinification phase takes place entirely in terracotta amphorae, where the wine also continues a part of the refinement, before ending the period in used woods. Fermented and aged in large acacia wood barrels.

Tenuta Dornach is a lot more than the winery, it is a real way of living the land and nature. After decades of production and sale of grapes, since 2008 the family of Karoline and Patrick Uccelli has resumed the direct production of wine. She is biologist, he is wine-maker and oenologist, and together they immediately married the biodynamic approach, where soil, plants and animals live in symbiosis. It is a unique experience to walk through the vineyards, between the colors of the flowers and the animal company. The first vintage was a study floor and saw the production of only a part of Pinot Nero and Pinot Bianco grapes, harvested manually early in the morning, to ensure optimum temperatures in the early stages of winemaking. The Tenuta Dornach wine line is made up of white and red for everyday use, in a one-liter format from local grapes, and of the most sought after labels of Pinot Bianco and Pinot Nero vinified in steel or wood. Top product is a macerated Gewurztraminer on skins from a local historic vineyard.
