A mi Chemin is made from a blend of 90% Chenin blanc and 10% Sauvignon. Herve Grenier has very low yields and in this cuvée he even manages to harvest 20 hectoliters per hectare. The wine is vinified and then aged for about a year in oak barrels. It is bottled without the addition of sulfur dioxide.

Domaine Vallée Moray - Montlouis sur Loire

When it comes to biodynamic and organic viticulture, the Loire is an inexhaustible source of discoveries and the Vallée Moray domain is yet another example. We are in Montlouis-sur-Loire, home to some of the most extraordinary wines of the region, thanks to the different parcels of chenin and the young producers who are enhancing these crus. The Domaine was born from the purchase of the vineyards and cellar of the old Les Loges de la Folie domaine by Herve Grenier who had been collaborating here for some time and which was a bit of his training ground since Herve does not come from a family of winegrowers, but comes to wine for passion.
Herve's goal is to produce clean wines, the result of conscious and honest work in the vineyard as well as in the cellar. From the vineyard grapes without chemistry and harvested at perfect maturity; in the cellar vinification with indigenous yeasts and without temperature control, fermentation on the lees for up to two years, no batonnage, no filtration and no addition of sulfur dioxide.
