The grapes for the Lay Riesling, are vineyards 40 years from a vine placed on gray and blue slate and published to the south. The planting is very dense, which forced the roots to go deep into the soil. The fermentation spontaneous was very slow and the wine was allowed to spend a lot of time on the yeasts, which gave it depth and aromatic complexity. slate, aromatic herbs and subtle hints of yellow fruit Tense and crunchy on the palate and at the same time fluid, with a subtle filigree, above all, elegant.

 

Three Senses

The color is bright purple, the texture is silky, enveloping. Never too heavy, indeed, it seems to have a quality of lightness like a dancer.
In the glass are vivid hints of fruit and herbs, enough to delight the mouth and nose for a long time.
It behaves like a light sedative after a stressful day.

We are in Moselle where slate is the soul of the land.

Rita and Rudolf grow vines in a small village (Kinheim-Kindel) in the heart of the ancient cultural landscape of the central Moselle.

Ancient because here the Celts and Romans were the first to understand that the climate and exposure were ideal for growing vines.

In addition to the favourable climatic conditions, there is also an essential element for this area: the grey and blue slate soil, capable of translating into wines as a delicate fruit aroma and deep minerality.  

Kinheim wines have a delicate fragrance and are contained in their saline and refreshing peel, never heavy nor too much alcohol. 

Rita and Rudolf have been continuing the efforts of the Romans and Celts since 1978 with an extremely conservative vision of that rich, self-explanatory heritage that is the soil.

Viticulture is all natural, with the help of biodynamic supplements, agricultural processes are encouraged so that wines can express all their heritage.

"In 1978 we decided to break with the tradition of the old family-run winery and switched to organic farming. "Biodynamics" means more than giving up artificial fertilizers, herbicides and other poisons, it is a mentality of responsibility, local action but global thinking." 

"Today we mainly cultivate Riesling, with growing international success. Most of the vines are located on steep slopes and we are amazed by the constant increase in the sophistication of the resulting wines. Obviously it takes a winegrower's whole life to move depleted and impoverished land to a new level of vitality".

The vines, grown organically, are not immune to pests and diseases. According to European Union regulations and the strict rules of the German organic winegrowers' association Ecovin, only grasses, minerals and a limited amount of hydrous copper solution may be used to prevent fungal diseases. The Ecovin label documents this transparency.
