Socaire is a wine of the Vino de la Tierra de Cadiz category, unfortified white wines obtained from Palomino Fino on albariza soils (subtype Tajón) within the sherry area. Primitivo Collantes in 2013 was one of the first to explore the dark zone among organically aged white wines, sobretablas and sherry. Thanks to these experiments, a movement was born that also took its name from this wine: Socairism or Sherry Revolution.

The Socaire is naturally fermented and aged for about 24 months in barrels which are kept full, where therefore there is no development of the "flor". Primitivo, however, has decided to use ex-Fino barrels in order to obtain a veil of flor, which gives subtle oxidation characteristics unique to this still and dry wine.

The vineyards are located in the Finca Matalián (19.5 ha) about 8 km from the bay of Cadiz, with an altitude of about 100 meters above sea level. This area was once home to some famous vineyards and plantations, but only a few have survived, with only two winemakers remaining in Chiclana.

Socaire means downwind, a place sheltered from the wind, which refers to the orientation and position of the vineyard behind a natural barrier.

This family winery was created at the end of the 19th century by the brothers Primitivo and Tomas Collantes, originally from Santander and who chose Chiclana to develop the production of Jerez wines. Today it is Primitivo Collantes, a young and dynamic producer contributing to the new movement of Jerez wines, who takes care of this farm with 55 hectares of vineyards owned in some of the famous plants in the area such as Pozo Galván, Matlián and El Inglês . The calcareous soils called albariza that allow the retention of humidity for the hottest months, the Atlantic winds that give freshness at night and favor the humidity necessary for the formation of yeasts and the precious Palomino grape contribute to the quality of the grapes that are brought into the ventilated cellar where wines mature in solera (pyramid of barrels from the most recent wines at the top to the oldest ones below). The products that come out are very steeped in territory and history, both family and local.
