The Bianco Benanti comes from the Caselle district, on the eastern side of Etna, municipality of Milo (Ct) and from the Cavaliere district, on the southern side of Etna in the municipality of S. M. di Licodia (Ct) at an altitude of 900 and 1,000 m asl.
The vineyard enjoys a high hill climate with significant temperature changes between day and night on volcanic sandy soil, rich in minerals, with a subacid reaction.
The Carricante vine is bred in alberello. This native vine is grown only on Etna. It seems that the name has been attributed by the winemakers of Viagrande for the attitudes of the vine to give a good production over the years. The bunches, when ripe, are of medium length, averagely sparse. The grape is medium in size with a very pruinose, yellowish-green skin. The pulp is juicy, the taste is simple and sweet.
The age of the vineyards is between 35 and 50 years.
The grapes ripen in the third decade of October. They are pressed whole with soft squeezing of the bunch. Fermentation takes place at a temperature of 18-20 ° C in steel tanks. The wine is left to mature for a certain period in the tank before being bottled.
Aging in bottle for two months.
