Gewurztraminer Demoiselle Rietsch is partly the Weinberg hamlet in Heiligenstein, a clayey and calcareous soil and Grand cru Zotzenberg Mittelbergheim composed of ferruginous sandstone limestone.

The grapes were selected in the vineyard for the maceration of the whole grapes.

This wine is the result of a partial maceration of whole grapes fermented on juice for 20 days. Spontaneous fermentation from indigenous yeasts. Malolactic fermentation made.
Breeding on lees of 6 months in a flash. Clarifying filtration on cellulose plates. No added sulphites.

Rietsch Vin d'Alsace

Rietsch makes organic, natural and experimental wines, made from grapes grown without any chemistry. This methods mean a more respectful approach of the vine and the earth, which are operated without pesticides, herbicides, fertilizers, insecticides and antifungal synthesis.

New winemaking processes are also being tested, mainly in two directions: the production of maceration wines ("orange" wines) and the production of a "perpetual wine".

For some cuvées, the grapes are left to macerate in the juice to extract the dyes and tannins. This process gives structure to aromatic wines, such as moscati, pinot grigio or gewurztraminer, which sometimes lack acidity and are traditionally vinified in semi-dry or sweet wines. The maceration helps to stabilize the wines in a natural way and modifies their aromatic register and taste, renewing the perception that can be had of these vines.

A perpetual harvest is also elaborated, assembling old vintages with juices of the last harvest, in order to combine the vivacity and freshness of the wine of the year with the breeding juices with a taste already defined and more complex.
